Veggie Salad with Broiled Salmon

Serves 6 | 

Heart healthy salmon mixed with a tasty salad is great for a quick meal.

Ingredients:

6 salmon fillets, (skinless, cut to chunks)
1 cup sugar snap peas
6 cups romaine lettuce hearts, (chopped)
1/4 cup radishes, (sliced)
1/2 teaspoon salt
1/2 cup edamame
1/4 teaspoon black pepper
Salad dressing, (your preference)
1 cup water
12 asparagus spears

Directions:

  1. Preheat broiler, oven rack 6 inches away from heat.
  2. Boil water in a pan.
  3. Remove asparagus ends and cut into inch long pieces. Add to pan with sugar snap peas, cook 2-3 minutes. Drop asparagus and peas in ice water, remove and set aside.
  4. Place salmon in broiler pan, sprinkle on pepper and salt. Cook for 3-4 minutes.
  5. Mix in salad bowl, edamame, asparagus mix, romaine lettuce and radishes. Add salmon and lightly toss together.
  6. Serve and enjoy!
