Frittatas with Bell Pepper and Bacon

Ingredients:
6 eggs |
3/4 cup chopped bell peppers |
1/2 cup chives |
1 tablespoon chopped fresh oregano |
1/2 cup cream |
Salt, to taste |
Ground black pepper, to taste |
1 cup diced Monterey Jack cheese |
1/4 cup chopped bacon, cooked |
2 tablespoon red wine vinegar |
Directions:
- In bowl combine eggs, chives, oregano, cream, salt and pepper. Whip ingredients together until fluffy. Set aside.
- Warm skillet to medium heat. Add cheese and cook until lightly browned, then add bacon and cook for about 2 minutes.
- Add red wine vinegar to the skillet, stir together, then add egg mixture and reduce heat to low. Cover and let cook for up to 20 minutes.
