Frittatas with Bell Pepper and Bacon

Serves 6

Great for brunch and relaxing weekends.

Ingredients:

6 eggs
3/4 cup chopped bell peppers
1/2 cup chives
1 tablespoon chopped fresh oregano
1/2 cup cream
Salt, to taste
Ground black pepper, to taste
1 cup diced Monterey Jack cheese
1/4 cup chopped bacon, cooked
2 tablespoon red wine vinegar

Directions:

  1. In bowl combine eggs, chives, oregano, cream, salt and pepper. Whip ingredients together until fluffy. Set aside.
  2. Warm skillet to medium heat. Add cheese and cook until lightly browned, then add bacon and cook for about 2 minutes.
  3. Add red wine vinegar to the skillet, stir together, then add egg mixture and reduce heat to low. Cover and let cook for up to 20 minutes.
Course: Side, breakfast, brunch
