Garlic and Herb Sweet Potato Fries

Ingredients:
2 lb sweet potatoes, sliced into fries |
3 tablespoons olive oil |
Sea salt, to taste |
Ground black pepper, to taste |
1 teaspoon chopped fresh thyme |
2 tablespoons chopped fresh parsley |
2 cloves garlic, finely minced |
Directions:
- Preheat oven to 500° F.
- Grease a large baking sheet with vegetable oil spray.
- Combine sweet potatoes and olive oil in a large bowl, toss to coat evenly.
- Arrange the sweet potatoes on the baking sheet. Season generously with salt and black pepper.
- Bake for 30 minutes or until golden brown and tender, turning potatoes once during cooking time. When potatoes are done, transfer to a platter.
- In a small bowl, mix together thyme, parsley and garlic. Sprinkle herb mix over sweet potatoes and enjoy.
