Green Chile Egg Casserole

Serves 8

Savory, eggy, cheesy and a little spicy.

Ingredients:

10 eggs, lightly beaten
2 cans diced green chiles, 4 oz. each
1/4 cup chopped green onions
1 tablespoon fresh chopped cilantro
2 cups half-and-half
2 teaspoon hot sauce
2 teaspoon dried minced onion
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 package tater tots, 20 oz.
2 cups grated pepper jack cheese

Directions:

  1. Heat oven to 400° F. Grease a large casserole dish with cooking spray.
  2. Combine the eggs, green chiles, green onions, cilantro, half-and-half, hot sauce, dried onion, cumin, garlic powder, kosher salt, and black pepper in a large mixing bowl.
  3. Arrange the tater tots in the casserole dish. Sprinkle half of the cheese over the tater tots. Pour the egg mixture over the cheese and then sprinkle the remaining cheese over top.
  4. Place the casserole dish into the oven and bake for 1 hour.
  5. Remove from the oven and let sit for 5 minutes before serving.
Course: Dinner, lunch, brunch
