Chocolate Dipped Crispy Rice Peanut Butter Balls
Serves 25 balls

Ingredients:
2 cups creamy peanut butter |
2 teaspoons vanilla extract |
1/2 cup salted butter |
2 cups powdered sugar |
3 1/2 cups crispy rice cereal |
1 package chocolate wafers, 20 oz. |
Directions:
- Add the peanut butter, vanilla extract, and butter to a mixing bowl. Stir together until fully combined.
- Add the powdered sugar to the peanut butter mixture. Stir together well.
- Fold the crispy rice cereal into the peanut butter mixture.
- Use a scoop to portion out the balls. Roll the balls in your hands to smooth them out and arrange them on a cookie sheet. Set aside.
- Melt the chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between session, until fully melted.
- Individually dip the balls in the melted chocolate. Place them back on the cookie sheet.
- Place the cookie sheet in the refrigerator for 15 minutes until the chocolate shell on the peanut butter balls has hardened.
- Remove from the refrigerator and enjoy!
