Oatmeal Apple Breakfast Cake

Ingredients:
1 cup oats
1 red apple, peeled and chopped
2 eggs
3 tablespoons plain yogurt
3 tablespoons honey
1 teaspoon vanilla extract
1 tablespoon coconut oil
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
Directions:
Preheat the oven to 350° F. Line a medium baking pan with parchment paper.
Add the oats, chopped apple, eggs, yogurt, honey, vanilla extract, coconut oil, baking powder, baking soda, and cinnamon in a food processor. Pulse until well blended and smooth.
Pour the oat mixture into the baking pan.
Place into the oven and bake for 20-30 minutes. Until top is light brown.
Remove from the oven and let cool. Once cool enough to handle, cut into 8 slices and transfer the slices to an airtight container. Place the lid on the container and place in the fridge to chill for 2 hours.
