Green Peas with Bacon and Dill
Makes 4 to 6 servings
- 4 thick bacon slices, cut crosswise into 1/4-inch pieces
- 1 small onion, chopped
- 2 cups fresh shelled peas
- 1/2 cup water
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons chopped fresh dill
- 1 tablespoon unsalted butter
- Cook bacon in a large skillet over medium heat, until browned and crispy ,Aei about 5 minutes. Leave bacon in the skillet, but spoon off fat, leaving about 2 tablespoons. Add onion and cook it begins to soften. Add peas, water, salt, pepper, and 1 tablespoon of the dill. Cover and cook, stirring occasionally, until peas are tender - about 5 to 8 minutes. Stir in butter and remaining tablespoon of dill.
