Sweet Watermelon Salad with Mint Leaves


5 lb. watermelon
6 whole mint sprigs
1/2 cup extra-virgin olive oil
4 oz. crumbled feta cheese
1/4 red wine vinegar
2 tablespoons chopped mint leaves
1 sweet onion
Salt, to taste
Pepper, to taste


  1. Cut watermelon into small pieces. Remove and discard seeds.
  2. Peel sweet onion and slice into rings.
  3. Combine salt, pepper and red wine vinegar in a mixing bowl. Slowly whisk olive oil into mixture. Add chopped mint leaves.
  4. Combine onion, watermelon pieces and feta cheese in a salad bowl. Pour dressing over watermelon and toss to combine.
  5. Spoon watermelon salad into serving bowls, garnish with mint sprigs and enjoy.
