Fresh Tomatoes with Angel Hair Pasta

Serves 4 | 


1 package angel hair pasta
4 on the vine tomatoes, chopped
1/4 cup dry red wine
1/4 teaspoon kosher salt
1 onion, diced
1 tablespoon olive oil
3 tablespoons oregano
1 clove garlic, minced
1/2 teaspoon ground pepper


  1. Cook pasta while preparing other ingredients. Cook until al dente, drain water and set aside.
  2. Pour olive oil into a medium saucepan. Bring to medium-high heat. Add onions and saute for 3 minutes. Add garlic to pan and saute for 1 minute. Add in ground pepper, tomatoes and salt, cook for 2-3 minutes. Pour in wine and cook 5-8 minutes, stirring occasionally. Remove from heat, stir in oregano. Serve sauce over cooked pasta.
