Bacon Wrapped Steaks


4 (1¼ - inch thick) Bacon WrappedPrime Top Sirloin, about 8 ounces each
2 tablespoons canola or extra-virgin olive oil
Kosher salt
freshly ground pepper


  1. Take the steaks out of the refrigerator and let sit, covered, at room temperature for approximately 20 minutes.
  2. Heat your grill to high. Brush steaks with oil on both sides and season well with Kosher salt and pepper. Hold steaks with tongs and sear the bacon all around until partially cooked. Then put steak on grill meat side down until golden brown and a little bit charred (4 to 5 minutes). Flip steaks over and continue to grill to desired doneness... 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
  3. Take the steaks off the grill and place on a plate or cutting board. Tent loosely with foil and let rest 5 minutes before serving.
