Marinated Lamb Loin Chops

Serves 8 | 


8 4 oz. each lamb loin chops, fat trimmed
2 tablespoons freshly chopped oregano, or teaspoons dried
1 tablespoon olive oil
2 tablespoons fresh lemon juice
2 tablespoons minced garlic
1/2 teaspoons lemon zest
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper


  1. Whisk together olive oil, oregano, lemon juice, garlic, lemon zest, salt and black pepper.
  2. Place lamb loin chops in a resealable bag. Pour marinade over lamb chops and seal. Shake bag to evenly coat. Let marinate for 1 hour.
  3. Preheat grill to high or oven to broil. Place lamb chops on grill or in broiling pan and cook for 3-4 minutes per side (for medium rare).
