Lemon-Parmesan Asparagus

Serves 6 | 


1 lb. asparagus, rinsed,tough, white bottoms
2 tablespoons Extra-virgin olive oil
1 teaspoon lemon zest
2 tablespoons freshly grated
parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste


  1. Cut asparagus into 2-inch sections, slicing at a diagonal.
  2. Bring a pot of water to a boil. Add asparagus then reduce heat to a simmer. Cook asparagus for 2 minutes then drain.
  3. Place hot asparagus in a bowl; drizzle with olive oil then add lemon zest and Parmesan cheese. Stir ingredients to combine. Season with salt and pepper then serve.
