The Perfect Grilled New York Steak


4 New York strip steaks, 1&1/4-inch thick
Kosher salt, to taste
2 tablespoons extra-virgin olive oil
Fresh ground pepper, to taste


  1. Remove steaks from the refrigerator, cover with paper towel and let sit for 20 minutes before cooking.
  2. Bring grill to high heat.
  3. Brush olive oil on steaks. Liberally season with salt and pepper.
  4. Place steaks on grill, cook for 4-5 minutes (steaks should be lightly browned and slightly charred). Flip and cook for an additional 3-5 minutes for medium-rare, 5-7 additional minutes for medium, and 8-10 minutes for medium-well.
  5. Transfer steaks to cutting board. Let rest for 5 minutes before serving.
