Marinated Tomatoes

Serves 8 | 


6 on-the-vine tomatoes, each cut into 6 wedges
3 tablespoons chopped fresh parsley leaves
1 tablespoon sugar
1 1/2 teaspoon garlic salt
1 1/2 teaspoon seasoned salt
1/2 teaspoon ground pepper
3/4 teaspoon dried thyme
3/4 cup vegetable oil
1/2 cup red wine vinegar
2 green onions, chopped


  1. Combine parsley, sugar, garlic salt, seasoned salt, pepper, thyme, vegetal oil, red wine vinegar and green onions in a large mixing bowl. Mix together well.
  2. Place tomatoes in a resealable plastic bag and pour marinade over. Marinate at room temperature for up to 2 hours, turning the bag occasionally.
  3. Discard liquids and enjoy!
  4. (Can be lightly sauteed to serve with seafood or chicken dishes)
