Brussels Sprouts, Prosciutto, and Raisins

Serves 6-8 | 


1 pound Brussels sprouts, sliced thinly
2 tablespoons olive oil
1 teaspoon kosher salt
6 slices prosciutto, minced
1 teaspoon teaspoon curry powder
1/2 cup raisins
1 tablespoon balsamic vinegar


  1. In a large mixing bowl, combine all ingredients and mix well. Lightly oil a cookie sheet or roasting pan, and spread the Brussels sprouts mixture evenly in one layer.
  2. Roast in a pre-heated 400 degree oven for 8 to 10 minutes, mixing and turning the mixture every 2 to 3 minutes.
  3. When cooked and lightly browned, transfer to a serving dish.
