Ingredients:
Carne Asada:
1 8 oz. package Sweet Earth Traditional Seitan
1 tablespoon Toomey's Seasoning
2 teaspoons smoked paprika
1/2 cup plus two tablespoons fresh orange juice
1/4 purple onion, sliced thin
1 heaping tablespoon cilantro leaves, chopped
2 tablespoons sunflower, avocado, or grape seed oil
Accompaniments:
large flour tortillas
guacamole
pico de gallo
roasted salsa
Mexican or Spanish Rice
black beans
sliced romaine lettuce
shredded vegan cheddar cheese
vegan sour cream
lime wedges
Directions:
Combine the vital wheat gluten, nutritional yeast, onion powder and garlic powder in a large mixing bowl, stir in the vegetable broth and mix scraping the sides of the bowl until it forms a sponge like dough ball. The dough should not be excessively dry or wet or sticky. Knead the dough for 5-6 minutes or until it feels firm and elastic. Divide the dough into five equal parts and set aside.
Remove the seitan from the package and coarsely chop it on a cutting board. Transfer the chopped seitan to a non-metallic small bowl and add the seasoning, paprika, orange juice, onion, and cilantro. Stir to combine and marinate 2-3 hours or overnight.
Prepare the accompaniments and cook the rice according to package directions.
