Pulled Beef Sandwiches

Serves 6

Extra tender and incredibly delicious.

Ingredients:

4 lb boneless chuck roast
1 can diced green chile peppers, 4 oz.
2 1/2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
3 cloves garlic, minced
Salt, to taste
Ground black pepper, to taste
6 hamburger buns

Directions:

  1. Preheat oven to 300° F. Tear off a long piece of heavy-duty aluminum foil.
  2. Set roast in center of foil.
  3. In a small bowl, mix together the green chile peppers, chili powder, cumin, oregano, garlic, salt and pepper. Rub seasoning mix all over the roast.
  4. Enclose the roast in the foil and place in a roasting pan. Cook for 4 hours, or until the roast falls apart with a fork. Remove from oven and shred, using forks.
  5. Spoon pulled beef onto the buns and enjoy!
