Banana and Blueberry Muffins

Serves 12

Sweet and wholesome.

Ingredients:

2 1/2 cups flour
1 1/2 cups rolled oats
2 teaspoons baking soda
1/8 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup honey
6 bananas
1 tablespoon vanilla extract
1 cup vegetable oil
2 cups blueberries

Directions:

  1. Preheat oven to 350° F.
  2. Grease two muffin tins with cooking spray.
  3. Combine together flour, rolled oats, baking soda, salt and ground nutmeg in a mixing bowl.
  4. In a separate bowl, combine honey, bananas, vanilla extract and vegetable oil.
  5. Add banana mixture to flour mixture and stir together until clumpy.
  6. Fold blueberries into the batter.
  7. Pour batter into muffin tins.
  8. Place muffin tins into the oven and bake for 30-40 minutes.
