Curried Cauliflower Soup

Serves 8

Highly flavorful and so easy to prepare.

Ingredients:

2 tablespoons olive oil
1 yellow onion, chopped
1 1/2 tablespoons sugar
4 teaspoons curry powder
8 cups chopped cauliflower florets
1 1/4 cups gold potatoes, peeled and diced into cubes
7 cups chicken broth
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Heat a heavy large pot over medium-high heat. Pour in olive oil. Once hot, add chopped onion and saute for about 5 minutes. Pour in sugar and curry powder and stir for 1 minute. Add cauliflower and potatoes and stir for 1 minute.
  2. Pour in chicken broth and bring to a boil. Reduce heat to medium, cover, and let simmer for about 35 minutes. Remove pot from heat.
  3. Working in batches, pour soup into a blender and puree. Transfer pureed soup into a second pot. Once all soup is pureed, bring the pot to a simmer.
  4. Season with salt and pepper. Ladle soup into serving bowls and enjoy.
