Holiday Persimmon Cookies

These cookies are sweet with a hint of spice.
Ingredients:
For Cookie |
1 cup persimmon pulp, from 3 persimmons |
1 cup raisins |
1 teaspoon cinnamon |
1/2 cup unsalted butter |
2 cups flour |
1/2 teaspoon ground cloves |
1 cup sugar |
1 teaspoon vanilla extract |
1/2 teaspoon ground nutmeg |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 egg |
For Orange Glaze |
1 teaspoon orange zest |
2 cups powdered sugar |
1/4 cup fresh orange juice |
Directions:
- Preheat oven to 350° F. Line two baking sheets with parchment paper.
- Whisk together cinnamon, flour, cloves, nutmeg, baking soda and salt in a mixing bowl.
- In a separate bowl, stir and cream together sugar and butter. Beat in persimmon pulp, vanilla extract and the egg. Once mixed, add flour mixture and stir until combined. Fold in raisins.
- Scoop out equal amounts of batter to make 36 cookies. Arrange cookie dough scoops on baking sheet. Place in oven and bake for 12-14 minutes. Cookies should have light golden brown edges.
- Remove from oven and let cool on rack.
- As cookies cool, whisk together orange zest, powdered sugar and orange juice in a mixing bowl.
- Drizzle glaze over cookies and enjoy.
