Pumpkin Pecan Pie

Ingredients:
1 pie shell |
For Filling: |
1 cup canned pumpkin |
1/3 cup sugar |
1 egg |
1 teaspoon pumpkin pie spice |
For Topping: |
2/3 cup light corn syrup |
1/2 cup sugar |
2 eggs |
3 tablespoons butter, melted |
1/2 teaspoon vanilla extract |
1 cup pecan halves |
Directions:
- Preheat oven to 350° F.
- Combine pumpkin, sugar, egg and pumpkin pie spice in a mixing bowl, stir together well. Spread over bottom of pie shell.
- Mix together corn syrup, sugar, eggs, butter and vanilla extract in the same bowl, stir in pecans. Spoon over pumpkin layer.
- Bake for 50-60 minutes. Remove from oven and cool on a wire rack.
