Easy Pumpkin Muffins

Serves 12

Perfect with a glass of milk.

Ingredients:

1 cup canned pumpkin
1 1/2 teaspoons ground cinnamon
1 1/2 cups flour
1/4 cup apple juice
1 1/4 cups sugar
1/2 teaspoon baking soda
2 eggs
1/4 teaspoon ground ginger
3/4 teaspoon salt
1/4 cup apple sauce
1 teaspoon baking powder
1/2 teaspoon ground nutmeg

Directions:

  1. Preheat oven to 350° F. Place baking liners in muffin tin.
  2. Combine cinnamon, flour, baking soda, ginger, salt, baking powder and nutmeg in a bowl. Mix until combined. Set aside.
  3. In a separate bowl combine pumpkin, apple juice, sugar, eggs and apple sauce. Stir together until blended.
  4. Pour wet ingredients into dry ingredients and fold together.
  5. Pour equal amounts of batter mix into each muffin cup. Fill until nearly full.
  6. Place in oven and bake for 20-25 minutes.
  7. Remove from oven and transfer to a rack to cool.
Course: Dessert, breakfast
