Easy Pumpkin Muffins
Serves 12

Ingredients:
1 cup canned pumpkin |
1 1/2 teaspoons ground cinnamon |
1 1/2 cups flour |
1/4 cup apple juice |
1 1/4 cups sugar |
1/2 teaspoon baking soda |
2 eggs |
1/4 teaspoon ground ginger |
3/4 teaspoon salt |
1/4 cup apple sauce |
1 teaspoon baking powder |
1/2 teaspoon ground nutmeg |
Directions:
- Preheat oven to 350° F. Place baking liners in muffin tin.
- Combine cinnamon, flour, baking soda, ginger, salt, baking powder and nutmeg in a bowl. Mix until combined. Set aside.
- In a separate bowl combine pumpkin, apple juice, sugar, eggs and apple sauce. Stir together until blended.
- Pour wet ingredients into dry ingredients and fold together.
- Pour equal amounts of batter mix into each muffin cup. Fill until nearly full.
- Place in oven and bake for 20-25 minutes.
- Remove from oven and transfer to a rack to cool.
