Spinach & Strawberry Salad with Light Poppy Seed Dressing

Ingredients:
For the Dressing:
1/4 cup nonfat plain yogurt
Zest and juice of one lemon
1 tablespoon sugar, honey, or agave
1 tablespoon poppy seeds
1/4 cup olive, canola, or flaxseed oil
For the Salad
1 bunch spinach
1 pint strawberries, washed & sliced lengthwise
1 large avocado, peeled and cubed
1/8 small red onion, thin sliced
2 tablespoons toasted slivered almonds
Directions:
Place all dressing ingredients in a bowl or jar. Whisk or shake until everything is well combined. Cover and refrigerate until ready to use.
Place spinach, strawberries, and avocado into a salad bowl. Drizzle with dressing and toss gently. Sprinkle with toasted almonds and red onion, and serve immediately.
