Apple-Pecan Pork Tenderloin Medallions

Serves 4

Sweet, savory and very quick to prepare.

Ingredients:

1 lb pork tenderloin
2 tablespoons butter
1 lb sliced apples
1/4 cup packed brown sugar
1/2 cup chopped pecans

Directions:

  1. Trim fat from pork. Cut pork into 1/2-inch-thick slices.
  2. Melt butter in a large skillet over medium-high heat until it sizzles. Reduce heat to medium. Arrange pork slices in skillet. Cook for 2 minutes; flip slices.
  3. Spoon apples over pork. Sprinkle with brown sugar and pecans.
  4. Cover and cook for an additional 4-6 minutes.
Course: Dinner
