Cocoyo Chia Pudding

Ingredients:

3 cups sweetened vanilla flax milk
2 heaping tablespoons Cocoyo living coconut yogurt
2 tablespoons maple syrup
1/2 teaspoon vanilla
1/2 cup chia seeds
 
Toppings:
Assorted berries
Sliced bananas
Granola

Directions:

  1. Combine the flax milk, Cocoyo yogurt, maple syrup and vanilla in a large mason jar or medium mixing bowl, shake or whisk the ingredients to blend. Sprinkle in the chia seeds one tablespoon at a time blending well before each new addition. Continue shaking or whisking the ingredients until they are completely blended. Place the jar or bowl covered in the refrigerator for 6-8 hours.
  2. Serve the chilled pudding with fresh fruit and granola. Keeps refrigerated three to four days.
