Fill a medium pot with water. Add asparagus tips. Bring pot to a boil. Cook asparagus for 3 minutes. Remove pot from heat and drain water. Rinse with cold water and drain. Set aside.
In a small mixing bowl, combine balsamic vinegar, garlic, salt, pepper and olive oil. Stir together well.
Transfer asparagus tips, chopped tomatoes and red onion to a salad bowl. Drizzle balsamic mixture over asparagus mixture and toss together.

Tomato Asparagus Salad
Serves 8
Ingredients:
4 tomatoes, coarsely chopped
1 lb. asparagus, tips cut off
4 teaspoon balsamic vinegar
1 clove garlic, minced
1/4 red onion, chopped
Salt, to taste
Pepper, to taste
1 tablespoon extra-virgin olive oil
Water, for boiling
