Toast the bread lightly then transfer to a piece of parchment or deli paper. Spread both with vegan mayo, top one with hummus, the other with avocado. Layer the meat, cheese, cucumbers and onion, sprinkle with the oil and vinegar dressing, top with tomatoes and add freshly ground sea salt and black pepper top with lettuce and the second piece of bread.
Fold the paper over the sandwich and tuck in the ends. Place a toothpick on either side of the sandwich, using a serrated knife cut through the paper and sandwich. Transfer the sandwich to a plate and serve with a fresh dill pickle and chips.

Deluxe Deli Sandwich
Ingredients:
2 slices artisan bread, artisan bread
3 slices vegan deli meat
1 slice vegan cheese
8 slices hot house cucumber, peeled
3 rings purple onion
2 slices tomato
2 pieces green leaf lettuce, stalk removed
1/4 avocado, sliced
1 tablespoon vegan mayonaise
1 tablespoon hummus
1 teaspoon oil and vinegar dressing
Freshly ground sea salt and black pepper to taste
