Vegan Spaghetti Bolognese & Garlic Bread

Ingredients:

INGREDIENTS:
Spaghetti:
2 tablespoons olive oil
1 meidum yellow onion, minced
4 cloves garlic, minced
1/2 bunch parsley, stems removed and chopped
1 2 oz. package beef-less crumbles
1 6 oz. package spaghetti noodles
1 24-30 oz. jar marinara sauce
pinch sea salt
 
Toppings:
Vegan Parmesan Cheese
Chopped fresh parsley
Red pepper flakes
 
Garlic Bread:
1 baguette of French or sour dough bread
1/4 cup vegan butter, melted
3 cloves garlic, minced
1/4 cup chopped parsley
1/4 cup vegan parmesan cheese
sprinkle smoked paprika, optional

Directions:

  1. Fill a large pot half way with filtered water and bring it to a boil.
  2. Prepare the parsley, onion and garlic. Heat a large skillet to medium high, add the olive oil then stir in the onion. Sauté for 3-4 minutes, then add the garlic, parsley, and beef-less crumbles. Continue sautéing another 3-4 minutes, reduce the heat to low and stir in the marinara sauce, allow it to simmer about 10-15 minutes to heat throughly.
  3. While the sauce is simmering preheat the oven to 425. Next, add a pinch of salt and a tablespoon of olive oil to the boiling water, place the noodles in the boiling water and cook for 8-10 minutes. Test for doneness then drain in a colander. Return the drained noodles to the warm pot to hold until serving.
  4. To prepare the garlic bread split the loaf lengthwise into two pieces. Combine the melted butter and garlic, spread it evenly over the inside of each piece. Sprinkle on the chopped parsley and vegan parmesan cheese, top with an optional sprinkle of smoked paprika.
  5. Bake the loaves garlic butter side up on a parchment lined baking sheet for 6-8 minutes or until they begin to lightly brown. Remove from the oven and cut into pieces.
  6. Serve warm with a plate of spaghetti noodles topped with the vegan Bolognese sauce. Garnish the plate with a sprinkle of vegan parmesan, chopped fresh herbs, and optional red pepper flakes.
