Dutch Apple Pie

Ingredients:

Filling:
6 medium Gala apples, sliced thin
1/4 cup unbleached all-purpose flour
1/2 cup cane sugar
1/4 cup light brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2 tablespoons lemon juice
2 tablespoons chilled vegan butter, chopped into small pieces
 
Topping:
1 cup unbleached all-purpose flour
1/2 cup light brown sugar, packed
1/2 teaspoon baking soda
zest of one lemon
1/4 cup plus two tablespoons vegan butter, softened
1/2 cup walnuts, chopped (optional)
Vegan vanilla ice cream

Directions:

  1. Preheat the oven to 350 degrees. Peel and slice the apples, toss them in a large bowl with the flour, cane sugar, brown sugar and spices. Sprinkle the lemon juice over the apple mixture and add the chopped butter, stir to blend then pour into the frozen pie shell.
  2. To prepare the topping combine the additional flour, sugar, baking soda, lemon zest and softened butter in a medium mixing bowl. Rub the ingredients together by hand until they are sandy in texture, stir in the walnuts then spread the mixture evenly over the top of the apples.
  3. Line a baking sheet with parchment paper and place the pie in the center of the sheet. Bake on the center rack in the oven for 60-70 minutes or until the apples are fork tender. Remove from the oven and allow the pie to cool before serving. Serve it a la mode with a scoop of vegan vanilla ice cream.
