Two-Cheese Jalapeno Quesadillas

Serves 4 | 


1/2 cup grated Cheddar cheese
1/2 cup grated Monterey Jack cheese
1/4 cup chopped pickled jalapenos
4 flour tortillas, 8-inch
Diced avocado, as garnish, optional
Sour cream, as garnish, optional


  1. Preheat broiler.
  2. Lay two tortillas on working surface. Combine cheeses in a bowl. Sprinkle cheeses and jalapenos on the two tortillas. Place the last two tortillas on top to create quesadillas. Transfer to a baking sheet.
  3. Place baking sheet in oven and broil quesadillas for 2-3 minutes, flip and broil for additional 2-3 minutes, until the cheese has melted and the tortillas are crisp and golden brown.
  4. Cut quesadillas into wedges. Top with diced avocado and sour cream, and enjoy.
