Chunky Vegetarian Chili

Serves 8

A healthy version of the comfort food favorite.

Ingredients:

1 tablespoon vegetable oil
2 cups chopped onions
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
2 cloves garlic, minced
1 tablespoon brown sugar
1 1/2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cans stewed tomatoes, undrained, 16 oz. each
2 cans black beans, rinsed and drained, 15 oz. each
1 can kidney beans, rinsed and drained, 15 oz.
1 can pinto beans, rinsed and drained, 15 oz.

Directions:

  1. Heat the oil in a Dutch oven or large pot over medium-high heat.
  2. Add onion, bell peppers, and garlic, saute 5 minutes or until tender.
  3. Add sugar and all remaining ingredients; bring to a boil. Reduce heat, and simmer for at least 30 minutes.
Course: Dinner
