Garlic-Rosemary Roasted Grape Tomatoes

Serves 8


Ingredients:

4 cups grape tomatoes
3 garlic cloves, peeled and diced
2 tablespoon rosemary
1 tablespoon basil
Salt, to taste
Freshly ground black pepper, to taste
1/2 stick butter, melted

Directions:

  1. Heat broiler to 400 degrees F.
  2. In a medium bowl add the grape tomatoes and garlic. Pour melted butter over the top, sprinkle rosemary and basil, then season with salt and pepper. Toss to coat evenly.
  3. Arrange tomatoes and garlic in a single layer in a medium glass baking dish. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.
  4. When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.
