Garlic-Rosemary Roasted Grape Tomatoes

Serves 8
Ingredients:
4 cups grape tomatoes |
3 garlic cloves, peeled and diced |
2 tablespoon rosemary |
1 tablespoon basil |
Salt, to taste |
Freshly ground black pepper, to taste |
1/2 stick butter, melted |
Directions:
- Heat broiler to 400 degrees F.
- In a medium bowl add the grape tomatoes and garlic. Pour melted butter over the top, sprinkle rosemary and basil, then season with salt and pepper. Toss to coat evenly.
- Arrange tomatoes and garlic in a single layer in a medium glass baking dish. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.
- When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.
