Grilled Opah with Basil Mint Chutney

Ingredients:
2 cloves garlic, chopped
Salt, to taste
4 scallions, sliced
1/4 cup parsley
1/3 cup mint leaves
1/2 cup basil
3 tablespoons extra virgin olive oil, more for rubbing fish
1 teaspoon honey
3 tablespoons lemon juice
1/4 cup water
2 fillets opah, 6 oz. each
Pepper, to taste
Directions:
Combine garlic, salt and scallions in a blender. Pulse until well combined. Add parsley, mint leaves and basil to blender. Pulse until well combined. After ingredients are mixed, add olive oil and blend together. Once combined, add honey, lemon juice and water. Pulse to combine. Set aside.
Preheat grill to medium-high. While grill is heating, rub opah fillets with olive oil and season with salt and pepper. Place opah on grill and cook for 4-5 minutes per side. Remove opah from grill and top with chutney. Enjoy!
