Sweet Watermelon Salad with Mint Leaves

Ingredients:
5 lb. watermelon |
6 whole mint sprigs |
1/2 cup extra-virgin olive oil |
4 oz. crumbled feta cheese |
1/4 red wine vinegar |
2 tablespoons chopped mint leaves |
1 sweet onion |
Salt, to taste |
Pepper, to taste |
Directions:
- Cut watermelon into small pieces. Remove and discard seeds.
- Peel sweet onion and slice into rings.
- Combine salt, pepper and red wine vinegar in a mixing bowl. Slowly whisk olive oil into mixture. Add chopped mint leaves.
- Combine onion, watermelon pieces and feta cheese in a salad bowl. Pour dressing over watermelon and toss to combine.
- Spoon watermelon salad into serving bowls, garnish with mint sprigs and enjoy.
