Fried Sand Dab Fillets

Serves 4


Ingredients:

10 sand dab fillets, a type of flounder
Salt, to taste
Pepper, to taste
2 cups cracker meal, a salt, pepper and garlic powder mixture
Cooking oil, for frying
Chopped parsley, for garnish
Lemon wedges, for garnish

Directions:

  1. Pour cracker meal in a large bowl. Place one sand dab fillet at a time in cracker meal and coat evenly.
  2. Pour a small amount of cooking oil in a large shallow pan. Bring to medium heat. Once hot, add one fillet at a time and cook for 1-2 minutes per side. Remove from pan and place on a paper towel lined plate. Repeat process with remaining fillets.
  3. Pour a small amount of pan juices over fish. Season with salt and pepper to taste. Garnish with parsley. Squeeze lemon wedges over fish and enjoy.
