Wedge Salad with Buttermilk Blue Cheese Dressing

Ingredients:
1 head iceberg lettuce, cut into 4 wedges
1 large tomato, cut into wedges
Blue cheese crumbles, for garnish
Bacon crumbles, for garnish
Coarse ground black pepper, for garnish
Make the salad by placing lettuce wedges on salad plates. Pour 1-2 tablespoon of dressing over the top and garnish with tomato wedges, blue cheese, bacon and pepper. Serve immediately and with additional dressing.
Buttermilk Blue Cheese Dressing
2 tablespoons minced fresh parsley
1 tablespoon snipped fresh chives
1 clove garlic, minced
1/4 cup mayonnaise
1/4 cup crumbled blue cheese
1/3 cup buttermilk
Salt, to taste
Make the dressing by placing all dressing ingredients in a blender or small food processor and purée. For more flavor make one day ahead and keep refrigerated until ready to use.
