Ribeye Steaks with Lime-Spice Rub

Serves 4

The perfect summertime steak recipe with a kick.

Ingredients:

4 ribeye steaks
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons fresh lime juice
2 teaspoons minced garlic
1 teaspoon ancho chile powder
1/4 teaspoon ground red pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon dried oregano
Cooking spray

Directions:

  1. Coat a grill rack with cooking spray then prepare grill. Bring grill to medium heat.
  2. In a small bowl, stir together lime juice, garlic, chile powder, red pepper, cumin, coriander. oregano, salt, and black pepper until combined. Rub mixture evenly over both sides of steaks and set steaks in a dish. Let steaks sit at room temperature for 15 minutes.
  3. Remove steaks from marinade. Discard any remaining marinade.
  4. Set steaks on grill rack and cook 5 minutes per side. (Or until desired doneness)
  5. Remove steaks from grill and let steaks sit for 5 minutes before serving.
Course: Dinner
