Marinated Lamb Loin Chops

Ingredients:
8 4 oz. each lamb loin chops, fat trimmed |
2 tablespoons freshly chopped oregano, or teaspoons dried |
1 tablespoon olive oil |
2 tablespoons fresh lemon juice |
2 tablespoons minced garlic |
1/2 teaspoons lemon zest |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
Directions:
- Whisk together olive oil, oregano, lemon juice, garlic, lemon zest, salt and black pepper.
- Place lamb loin chops in a resealable bag. Pour marinade over lamb chops and seal. Shake bag to evenly coat. Let marinate for 1 hour.
- Preheat grill to high or oven to broil. Place lamb chops on grill or in broiling pan and cook for 3-4 minutes per side (for medium rare).
