Quick & Easy Romaine Salad

Ingredients:
2 cups romaine lettuce |
3 tablespoons lemon juice |
3 tablespoons water |
1 tablespoon olive oil |
3 tablespoons Dijon mustard |
2 cucumbers, peeled and chopped |
1/2 red onion, peeled and diced |
Directions:
- In a small bowl, whisk together mustard, lemon juice, water and olive oil.
- In a salad bowl, toss together romaine lettuce, cucumbers and red onion.
- Pour dressing atop salad, toss tocoat then serve.
