Navel Orange and Pomegranate Salad

Serves 4

Two of the holiday’s favorite fruits in one dish!

Ingredients:

1 navel orange
1 tablespoon orange juice
2 tablespoons extra-virgin olive oil
1 pomegranate
1 tablespoon pomegranate juice
5 cups baby spinach
1/2 cup feta cheese, crumbled
1 tablespoon red wine vinegar

Directions:

  1. Peel orange and separate into segments. Cut pomegranate in half and scoop out arils.
  2. Combine orange juice, pomegranate juice, olive oil and red wine vinegar in a sealable container. Shake contents well.
  3. Place baby spinach in a large salad bowl. Drizzle 1/3 of the vinaigrette over spinach and toss together. Add half of the pomegranate arils and orange segments to salad. Toss together.
  4. Serve salad amongst plates and top with crumbled feta cheese and remaining orange segments and pomegranate arils.
