Salmon with Greens & Mushrooms

Ingredients:
1 teaspoon sesame oil
1/2 cup shiitake mushrooms, stemmed and sliced
3 tablespoons soy sauce
2 salmon fillets, skinned
Fresh ground pepper, to taste
1 clove garlic, finely minced
1 3/4 cups bok choy, stalks separated from leaves and roughly chopped
Salt, to taste
2 tablespoons vegetable oil
Directions:
Heat a nonstick pan to medium heat. Once hot, add salmon and cook for 4 minutes per side.
In a separate pan, combine minced garlic and vegetable oil. Bring pan to medium heat. Add bok choy stalks, and shiitake mushrooms to pan, stir continually for 1 minute. Place cover over pan and cook for 5 minutes. Remove top from mushroom pan, add sesame oil, bok choy leaves and soy sauce. Cook for an additional 2-3 minutes (bok choy leaves should be wilted).
Place salmon on serving plates. Place bok choy and mushrooms on top of salmon. Season with salt and pepper and enjoy.
