Vegan Roasted Sweet Potatoes and Bean Quesadillas

Ingredients:
1 can vegan refried beans
4 gluten free tortillas
2 tablespoons olive oil
8 slices vegan cheese
1/2 teaspoon sea salt
2 sweet potatoes, (peeled and sliced)
1 avocado, (sliced)
2 tablespoons vegan butter spread
2 teaspoons cumin
Directions:
Preheat oven to 425° F.
Arrange sweet potatoes in a baking dish. Season with sea salt and cumin. Drizzle olive oil over top and toss. Place baking dish in oven and bake for 40 minutes.
Melt 1/2 tablespoon vegan butter spread in a skillet on medium heat. Once melted, place tortilla in skillet. Spread a small amount of refried beans over half the tortilla.
Spoon a small amount of roasted sweet potatoes on top of beans. Place 2 slices on top of sweet potatoes. Fold over tortilla and press flat.
Cook quesadilla until golden brown and flip. Cook again until golden brown and cheese is melted. Repeat process with remaining ingredients.
Quarter quesadillas and serve with avocado slices.
