Roasted Zucchini

Serves 4 | 


Ingredients:

1 zucchini
2 tablespoons olive oil
1 teaspoon minced garlic
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper
1/2 teaspoon salt

Directions:

  1. Preheat oven to 450° F. Cover baking sheet with aluminum foil.
  2. Cut zucchini lengthwise into quarters then cut each piece in half crosswise.
  3. Toss zucchini with oil, garlic, dried Italian seasoning, crushed red pepper and salt. Arrange zucchini on the baking sheet.
  4. Bake for 15 minutes or until golden brown and tender, turning zucchini once after 7 minutes.
