In a bowl, mix together the cornmeal, flour, salt, pepper and cayenne. Dip the catfish fillets in the flour mixture. Coat both sides evenly.
Pour corn oil into a large skillet, turn to high heat. Once hot reduce heat to medium and arrange the fish fillets in the skillet. Cook for 3 minutes. Turn and cook the other side for an additional 3 minutes (Until golden brown)
Remove the fried catfish from the skillet, place on serving plates.
