Southwestern Beef and Bean Burrito

Serves 10 | 

A classic recipe with a little twist.

Ingredients:

10 flour tortillas, (warmed)
1 packet taco seasoning mix
2 1/2 cups diced lettuce
1 can whole black beans, (drained and rinsed)
1 1/4 cups shredded Mexican blend cheese
Cooking spray
1 can tomato sauce
2 1/2 lb beef chuck roast, (trimmed, and quartered)

Directions:

  1. Sprinkle roast with taco seasoning mix. Coat evenly.
  2. Grease inside of slow cooker with cooking spray. Place chuck roast in slow cooker.
  3. Cover and set to low. Cook for 9-11 hours.
  4. Remove roast from slow cooker. Shred beef and return to slow cooker. Turn to high heat. Add black beans and stir together. Cook for 5 minutes.
  5. Spoon 1/2 cup of beef mixture in center of tortillas. Sprinkle cheese over beef and roll up.
