Scrumptious Sirloin Steak Chili

Serves 4

Bacon, spices, tomatoes, what else can you ask for?

Ingredients:

1 teaspoon ground cumin
2 cloves garlic, (minced)
1 can diced tomatoes
2 teaspoons dried oregano
8 slices bacon
1 can kidney beans
1 green bell pepper, (diced)
1 lb. sirloin steak, (cubed)
1 cup corn kernels
1 teaspoons smoked paprika
1 onion, (diced)
1 green bell pepper, (diced)
Salt, (to taste)
Ground pepper, (to taste)
Sour cream, (for garnish, optional)
Shredded cheese, (for garnish, optional)

Directions:

  1. Cook bacon in a large saucepan until crisp on medium heat. Drain most of the liquid. Transfer bacon to a plate.
  2. Add garlic, steak and bell pepper to saucepan. Season with salt and pepper. Cook until steak is evenly browned.
  3. Cut each bacon slice in half. Crumble half the bacon over the steak. Season steak with cumin, oregano and paprika. Stir together. Cook for an additional 2 minutes.
  4. Add tomatoes, kidney beans and corn kernels to pan. Sprinkle with salt and pepper. Stir ingredients together. Reduce heat to simmer and cook for 35-45 minutes.
  5. Spoon chili into serving bowls. Crumble remaining bacon over top, add a dollop of sour cream and shredded cheese if desired.
