Acorn Squash Filled with Cranberries and Walnuts

Serves 2 | 

A healthy and delicious side dish.


1/2 cup cranberries
4 tablespoons brown sugar
1 acorn squash
2 tablespoons butter
1/2 cup walnuts, (chopped)


  1. Preheat oven to 375° F.
  2. Toss together cranberries, brown sugar and walnuts.
  3. Cut acorn squash in half. Remove seeds.
  4. Spoon cranberry mixture into squash halves. Top each squash with 2 tablespoons butter.
  5. Arrange squash halves on baking sheet. Cover tops with aluminum foil. Bake for 75 to 95 minutes.
  6. Remove from oven and serve immediately.
