Oatmeal Pumpkin Muffins

Serves 14
Slightly sweet with a hint of spices.
Ingredients:
1/4 cup milk |
1 teaspoon ground cinnamon |
1 egg |
3/4 cup brown sugar |
1/4 teaspoon allspice |
3 tablespoons canola oil |
1 egg white |
1 1/2 cups whole-wheat flour |
1/4 teaspoon ground nutmeg |
1/2 teaspoon baking soda |
1 1/2 cups old-fashioned oats |
1 1/2 cups pumpkin puree |
1 teaspoon baking powder |
Directions:
- Preheat oven to 375° F. Place liners in muffin tin.
- Whisk together ground cinnamon, brown sugar, allspice, whole-wheat flour, baking soda, old-fashioned oats, baking powder and ground nutmeg in a mixing bowl.
- In a separate bowl, combine milk, egg, canola oil, egg white and pumpkin puree. Mix together well.
- Add wet ingredients to dry ingredients. Stir together well.
- Fill each muffin tin 3/4 full. Place in oven and bake for 15-18 minutes.
