Oatmeal Pumpkin Muffins

Serves 14 | 

Slightly sweet with a hint of spices.


1/4 cup milk
1 teaspoon ground cinnamon
1 egg
3/4 cup brown sugar
1/4 teaspoon allspice
3 tablespoons canola oil
1 egg white
1 1/2 cups whole-wheat flour
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1 1/2 cups old-fashioned oats
1 1/2 cups pumpkin puree
1 teaspoon baking powder


  1. Preheat oven to 375° F. Place liners in muffin tin.
  2. Whisk together ground cinnamon, brown sugar, allspice, whole-wheat flour, baking soda, old-fashioned oats, baking powder and ground nutmeg in a mixing bowl.
  3. In a separate bowl, combine milk, egg, canola oil, egg white and pumpkin puree. Mix together well.
  4. Add wet ingredients to dry ingredients. Stir together well.
  5. Fill each muffin tin 3/4 full. Place in oven and bake for 15-18 minutes.
