Basic Polenta

Serves 6


Ingredients:

6 cups water
2 teaspoons salt
2 cups yellow cornmeal
3 tablespoons unsalted butter

Directions:

  1. Bring 6 cups of water to a boil in a heavy
  2. large saucepan. Add 2 teaspoons of salt.
  3. Gradually whisk in the cornmeal and reduce heat to low.
  4. Cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes.
  5. Turn off the heat and add the butter. Stir until melted.
  6. Once cooked, spread the polenta into a sheet pan to cool.
  7. Using a pizza cutter, slice the polenta into squares or triangles.
  8. Place the polenta in a serving bowl or on a plate and top with the sausage and peppers.
