Farfalle Pasta with Grilled Scallions and Tomato

A classic Italian style meal with a few tasty additions.

Ingredients:
Salt, (to taste)
14 whole scallions, chop up 4
10 oz Farfalle pasta
Ground black pepper, (to taste)
4 plum tomatoes, (peeled, seeded and chopped)
1/4 cup extra-virgin olive oil, (more for taste)
1 sausage, chopped
Directions:
Combine 1/4 cup of olive oil, the chopped scallions and 3/4 of the chopped plum tomatoes in a food processor. Pulse ingredients to a puree. Season with salt and pepper.
Heat saucepan to medium. Place whole scallions in saucepan, then drizzle with olive oil and season with salt and pepper.
Turn heat to high, add sausage to scallions. Cook for 3-4 minutes, until scallions get charred.
Transfer charred scallions to cutting board and cut into 1-inch pieces.
Fill a pot with water, bring to a boil. Add Farfalle pasta, cook until al dente.
Remove pasta from pot, transfer to mixing bowl. Add charred scallion, sausage and scallion puree to pasta, toss together. Season with salt and pepper.
Spoon pasta onto serving dishes, top with chopped tomatoes and enjoy!
